Bacon Wrapped Chicken Tenders Recipe
This past weekend, I had an amazing CVS sponsored Big Game party. I made a few great dishes which included little smokies appetizers. I had half of a pack of bacon left over, and wanted to make something creative with it. Yesterday I pulled out some fresh cut chicken tenders, and then it hit me. Why not incorporate that extra bacon into this chicken dish. Chicken, and bacon are two meats that really work well together, and complement each other.
Ideally, I would have loved to wrap my bacon strips around my chicken tenders, and grill them. However, that plan is not really ideal in this snowy New England weather. So, I decided pan frying my chicken with the bacon wrapped around it would be my best option. I cut up some potatoes for homemade fries and figured I’d serve my pan fried, bacon wrapped chicken with a side of honey mustard dressing.
There are a few tips I suggest for those of you would would like to try this great dinner idea. The first is heat 2 tablespoons of olive oil over medium heat before adding your bacon wrapped chicken. You do not want the bacon to burn, or cook too fast. Keeping your stove at medium heat will prevent this mishap. Secondly, you will want to make sure you carefully flip your tender over so the bacon stays wrapped. This is not very hard to do, but worth mentioning.
How to make bacon wrapped chicken tenders:
- 1 package of fresh chicken tenders (these are batter free) I made about 1 1/2 lbs worth
- 8 slices of bacon to wrap around each tender. This could/will vary depending on how many tenders you have. The idea it to wrap one slice around each
- salt, pepper, onion powder, garlic powder top taste
- 2-3 tablespoons of olive oil
Directions:
Carefully wrap one slice of bacon around each chicken tender
Heat a large skillet with oil over medium heat
Add your tenders, and cook them evenly on both sides. This took me about 15 minutes to fully cook them. You will want clear juices to run freely from your chicken
Serve warm so that your bacon remains crispy. You will find these to be the moistest chicken tenders EVER! I totally enjoyed mine with a side of freshly made fries, and honey mustard sipping sauce. It was really awesome!
