Marinated Shrimp Salad Recipe
I really cannot believe that June is almost over! Summer has already started, and that means my ac units have all been set up! I don’t know about you, but I really hate using my oven in the Summer. While it is often a necessity, I do not like baking, but find a quick saute to be ok. I love, love, love my grill and try my hardest to use it for almost every meal. For my marinated shrimp salad recipe, you can either grill, or quickly saute your shrimp.
Since shrimp cooks very quickly, you certainly only want to cook it until it turns orange. The same thing goes for grilling-do not over cook your shrimp because they will turn into chewy, rubbery, tasteless little curls. For this recipe I marinated my shrimp with hot sauce, paprika, onion, & garlic powder, chile powder, parsley and fresh garlic.
- 2 lbs medium de-veined shrimp, peeled
- 4 cloves of garlic
- 3 tablespoons Extra Virgin Olive Oil
- 1/2 cup white wine
- 2 tablespoons Frank’s Red Hot
- 1 teaspoon paprika, onion, garlic powder, chile powder
- Fresh parsley
Fresh lettuce, radishes, cucumbers, cherry tomatoes
Marinate your shrimp for at least 8 hours. If you decide to grill your shrimp be sure to use a grilling pan. It will save you so much time, and you will not have to worry about skewing your shrimp. If you saute them on your stove-top it will only take you about 5 minutes to do so on medium heat. Be sure to only cook them until they turn orange-you ARE NOT looking to brown them!
Serve chilled, or warm on your salad. There is so much variations for you to enjoy a nice marinated shrimp salad!
