Easy Summer Vegetable Soup Recipe
Did you know that I have NEVER actually made my own soup? For years, my husband has been requesting soup, but I really do not like, nor care for soup. I don’t like feeling overly full, or hot, and soup always makes my feel sick. Don’t get me wrong, there is nothing wrong with soup, and some varieties are better than others, but it just isn’t my first choice in meals. ‘
Recently, my husband took it upon himself to make an easy Summer Vegetable Soup. We have had an abundance of Summer veggies like onions, zucchini, green beans, tomatoes and more. Our harvest is so bountiful that we have had to share, and come up with creative ways to use it. Since our crops are growing so rapidly, I have found myself cutting up vegetables like squash, zucchini, and onion, and freezing them in portions. I put two cups of each veggie in a freezer bag, and simply empty the contents into my pan to cook. This saves me time, and money because nothing goes to waste.
For our easy Summer Vegetable Soup Recipe, we were able to save time, and just add some of our frozen veggies into the pot. If you are going to freeze your fruits and vegetables make sure you create a reliable system. Always rotate, and date all your bags so you know which to use first. It also helps to allow for as little air as possible in the bag to keep the fresh.
- 10 cups of water
- 5 vegetable bouillon cubes
- 3 cups of zucchini cubed
- 1 large onion chopped
- 4 cups of cut green beans
- 2 cups halved cherry tomatoes
- 4 cloves of finely shopped garlic
- 3 large kale leaves chopped
- 3 stalks of celery chopped
- 1 cup chopped carrots
- 1 tablespoon Savory Spice Shop’s Italian Dressing Blend
Add all your ingredients to a large stock pot, and bring to a boil
Once your soup reaches roaring boil, turn the heat to medium, and allow it to simmer for 45 mins or until the veggies are tender.
