Copy Cat Chipotle Mexican Grill Cilantro-Lime Rice Recipe
I can’t believe it took me almost one year to try my local Chipotle Mexican Grill Restaurant. I am not sure what was keeping me from visiting, but when I got word that most of their menu was gluten free; I was there in a flash. It is so refreshing to have a restaurant that my 4 year old can safely eat at without any reactions.
One of my families’ favorite dishes on the Chipotle menu is their Cilantro-Lime Rice. It is such a simple; yet delicious way to enjoy rice. I had never thought about adding my #1 favorite herb -cilantro to rice in the past. However, the inspiration I received from Chipotle’s had me trying to make a Copy Cat Chipotle Mexican Grill Cilantro-Lime Rice Recipe in the comfort of my own home.
When I eat Chipotle’s Cilantro-Lime Rice, I obviously taste, and see cilantro. While no one but the cooks know the exact recipe, I a guessing it is fresh chopped cilantro, some sea salt, and fresh squeezed lime juice. I decided to make some for dinner to accompany a wing dish I made, and wow did it taste identical to Chipotle’s.
Copy Cat Chipotle Mexican Grill Cilantro-Lime Rice Recipe ingredients:
- 2 cups of long grain white rice
- Juice of one medium lime
- small handful of fresh cilantro
- teaspoon of ground sea salt
- tablespoon of extra virgin olive oil
Prepare your rice according to your manufacturer’s instructions. Once it is done, squeeze the juice of one fresh, medium lime into the pan; add your teaspoon of ground sea salt, and oil. Finely chop your cilantro, and add it to your pan. Stir well, and serve.
My Copy Cat Chipotle Mexican Grill Cilantro-Lime Rice Recipe was such a hit with my family that it has become a regular, go to side dish. However, I am afraid I will still visit Chipotle because I may be addicted to their burritos just a slight bit…haha!
