99 Restaurants Inspired Butternut Squash Recipe #GlutenFree
One of my all time favorite places to eat here is New England is 99 Restaurants. I have been a long time fan of the chain and even have a hard time keeping the name straight. It used to be called Pub 99, but they dropped that and went for a more family friendly appeal. Just about everything on their menu is delicious and always priced reasonably! They have amazing cole slaw, and their seasonal butternut squash veggie side is way too good!
I have been getting their butternut squash for years, and love to eat it with their Country Fried Chicken and Steak! It is so good that it inspired me to try and replicate it at home. While I do not know exactly what is it their butternut squash, I am happy to say that my 99 Restaurants Inspired Butternut Squash came out spectacular!
I am such a fan of sweet potato, and squash purees! I am actually kicking myself that I didn’t make all my kids baby foods when they were younger (only my son’s). Steaming, and pureeing veggies is so easy, and the results are out of this world tasty! If you love squash, you must try this recipe out! I used my Ninja Blender and it did a great job at pureeing the steamed squash chunks to my desired consistency.
Here is what you will need to make 99 Restaurants Inspired Butternut Squash:
- 1 large Butternut Squash
- 4 tablespoons butter
- 1 1/2 tablespoons of brown sugar
- pinch of salt
- 1/2-1 tablespoon of cinnamon
- pinch of nutmeg
Wash, Peel, de-gut and chunk you butternut squash (2 inch pieces)
Add them to a steamer, and steam for 25 minutes on medium-high *make sure their is at least 1 inch of water in your steamer
Drain excess water, and add them to a large mixing bowl, or blender.
Add your above ingredients, and puree until semi-smooth.
