3 1/2 Minute Baked Apple and Raisins: Only 1 Weight Watchers® Points Plus®!!
With the New Year right around the corner, many of us will set goals to live a healthier life in 2015. Overall health starts with what we put into our bodies. There is no getting around this fact, so I am hoping to once again strive to eat all natural, whole foods. I have done really well on Weight Watchers® in the past, and love their Points Plus® system. That is what inspired me to make this 3 1/2 Minute Baked Apple and Raisins that really does taste better than apple pie!
Honestly, apple pie is one of my all time favorite sweet treats. I could probably eat it everyday, but who am I kidding? All that butter, crust, and sugar taste awesome, but it does a number to my body. Thankfully, microwaved “baked” apples are super easy to make, and taste very similar to apple pie, or even apple crumble. I had some raisins on hand and decided to add roughly a tablespoon’s worth to my apple which equals one Weight Watchers® Points Plus®. I also added about 1/4 teaspoon of cinnamon, and the smallest pinch of brown sugar. You can also use the zero Weight Watchers® Points Plus® Splenda Brown Sugar.
This VERY healthy baked apple still had a nice slight crisp, and was just all around perfect in the microwave. You can cover it with a paper towel to sort of steam it, and enjoy the flavors. You will want to use a Jonagold, Cortland, Macoun, or Honeycrisp because I found these are personally my favorite best baking apples.
To prepare a single baked apple, you will need one of the above varieties of apples. They really have the perfect balance of sweet with a hint of tart. You will also need a pairing knife to core your apple roughly 3/4 down. Additionally, you will need 1/4 teaspoon of brown sugar (or zero calorie Splenda Brown Sugar Sweetener), and cinnamon, as well as 1 tablespoon of raisins.
Core your apple, and then fill it with your raisins. Sprinkle it with cinnamon and the brown sugar. Cover it with a paper towel, and then microwave your apple for 3/12 minutes, and enjoy with a spoon. Allow your apple to coll for at least 1 minute before digging it. My kids LOVE this 1 Weight Watchers® Points Plus® snack, and so do I.
