Avocado & Egg Toast: A Deliciously Healthy Way to Start the Day

Lately, my husband has been really adamant about us eating healthier. He watches so many documentaries, and reads so many health related articles and gets really passionate about what we put into our bodies. I guess you could say I am the more rebellious one and have a craving for foods that are not always the best for me.
Eating more nutritious, super foods is on our list. These include foods like avocados, greens like spinach and swiss chard, blueberries, beans, almonds, and more. Basically, he wants to us to add more color and nutrition to our diets and slowly nix out the bad stuff. I don’t blame him because I know the key to a happy and healthy life does pertain to what I put into my mouth.
When the opportunity to try Arnold® Healthfull® Bread came about I was interested in making the switch from the Rye, and typical wheat bread I buy for my family. I agreed to try it for a week, but if I liked it there was always the possibility it could be a keeper of a product.
Once I received my coupons, I headed to our local market and picked up the Flax and Sunflower, and Steel Cut Oats and Honey varieties. Avocado & Egg Toast was much better than I ever could imagine! I used the Flax and Sunflower bread and popped it in the toaster as I made a couple of scrambled eggs. Then, I washed and rinse about 1 cup of organic super greens mix and placed it on the toast. For an extra boost, I then sliced an avocado, and placed some on each piece, and finished it off with a heaping dollop of peppered scrambled eggs.
- 1 cup super greens rinsed, and dried
- 2 sliced of Arnold® Healthfull® Flax and Sunflower Bread
- 2 eggs; scrambled
- pepper to taste
- half an avocado, sliced
I know, I bet it sounds like a not so desirable breakfast, but I swear the flavors all went together perfectly! The bread was not too “grainy” tasting, and complemented the buttery avocado and eggs tastes. The greens were so crisp and pulled the flavors together. Plus, most importantly I had energy and actually felt like tacking my day! My belly was full, and I was not wanting to eat by 10!
I am making french toast with the Steel Cut Oats and Honey later today which my kids love! Those picky little buggers are such bread snubbers! They did pull off the edges of both varieties of Arnold® Healthfull® Bread but they do that with every bread. They also let me know that they love the smaller sized bread and the fact that it is not wheaty tasting (totally made up word?). As a mom that makes me happy because I try my hardest not to give them white bread.
