Green Bean Casserole Over Mashed Potatoes
A delicious spin on a classic! Turn this favorite holiday green bean side dish into a meal!
Green bean casserole is one of them iconic, traditions that many of us will soon be enjoying over the holiday season. I know our family has been enjoying this dish ever since my first Thanksgiving day meal. Rather than just serving up some drained green beans she was always sure to whip up a nice family-sized green bean casserole to accompany our turkey, and dressing like mashed potatoes.
That recently got me thinking. Mashed potatoes and green bean casserole are my two favorite holiday side dishes so why not combine them and make a meal out of them? That is where my Bean Casserole over mashed potatoes serving idea came from. Enjoying some Green Bean Casserole Over Mashed Potatoes is fun and super tasty!
I am not sure about your family but I know mine are more apt to enjoy a meal that looks nice, and is “fun”. These Green Bean Casserole Over Mashed Potatoes are just that are actually so hearty that they make a complete meal! I love the flavor of French’s® Crispy Fried Onions over some fresh red bliss mashed potatoes. Plus the creamy green bean casserole underneath is just way too good!
- 4 cans of Del Monte® Green Beans
- 2 cans of Campbell’s® Condensed Cream of Mushroom Soup
- (2) 2/3 of a cup of French’s® Crispy Fried Onions
- 1/2 cup milk
- 1 teaspoon of black pepper
- 2 tablespoons of soy sauce
- 8-10 small/medium red bliss potatoes
- 1/2 cup of milk
- 3 tablespoons of butter
- salt & pepper to taste
Scrub, and cut potatoes into small pieces, and add them to a large stock pot of boiling water
Boil until fork tender
Once boiled, drain water, and add in butter, and spices; slowly add in milk and mash until potatoes are fluffy.
For casserole, drain the liquid from the green beans
Pour all ingredients with the exception of one 2/3 cup of French’s® Crispy Fried Onions (save for topping) into the casserole dish, and stir
Bake for 25 minutes at 350 degrees
Remove, and top with remaining French’s® Crispy Fried Onions and bake for 5 minutes
To make a large batch of this recipe, simply bake the green bean casserole with the mashed potatoes over it, and then top with crispy onions.
This recipe is perfect for chilly days, or the holiday season. It is easily re-heated, and makes for delicious leftovers.
