Diabetes Friendly Broccoli & Cheese Stuffed Potato and Shake

Ever since I was younger, diabetes has always been a part of my life. Thankfully, I do not have the disease, however, many people in my family do, or are pre-diabetic. When I was younger, I would watch my late aunt inject herself with insulin at certain times, and I always wondered why she had to eat a special diet.
Now, as an adult, I am very cautious to prevent type 2 diabetes. I try my hardest to eat a well-balanced diet and exercise regularly. Thankfully, type 2 diabetes can be maintained by eating a diabetic friendly diet and consuming products from Glucerna. Broccoli & Cheese Stuffed Potato ingredients:
- 1 medium (6-oz) potato, baked with skin
- 1/3 cup shredded low-fat cheddar cheese
- 1/2 cup cooked chopped broccoli
- 2 Tbsp. light sour cream
- Pinch of salt substitute
Slice washed russet potato down the middle, cover with a damp paper towel, and cook in the microwave on high for 5-6 minutes. Split baked potato with a knife. Stuff with broccoli, cheese, and sour cream. Sprinkle with salt substitute.
This recipe made such a lovely lunch and was super filling. It was amazing how delicious this stuffed potato truly was even though it was not how I would admittedly normally make it. Eating a diabetic friendly lifestyle is actually easy and beneficial because you are eating less sugar and fats.
