Easy Gluten Free Chocolate Macaroons

It seems like these days, going gluten-free is not only a medical necessity for some, but also a way of living for many. I know my husband has gone gluten-free in the past and he felt better than ever. Thankfully, these days, living a gluten-free lifestyle can be made easier for many thanks to companies like Post, and their new Honey Bunches of Oats Chocolate cereal which is gluten-free.
Since our middle child required a gluten-free diet for her first 4 1/2 years of her life, I am very familiar with the world of gluten-free living. It was a very difficult road back then because there were not a lot of mainstream brands creating gluten-free products. I had to shop at specialty stores, and buy products she didn’t care for.
When we received two boxes of Honey Bunches of Oats Chocolate cereal, my kids were eager to try them out. Honestly, I didn’t give it initial high hopes because most gluten-free cereal is not that good! I love the Almond Honey Bunch of Oats so I was hoping this variety stacked up. After my first taste test, I can say that this cereal (made with real cocoa) is delicious and I will be adding it to my weekly shopping list. the combination of flakes, and clusters is perfect and the flavors are awesome and not stale tasting.
The food blogger in me not only was excited to try it out, but I wanted to create a snack from it that my kids would also enjoy. Using pantry staples and the Honey Bunches of Oats Chocolate cereal, I was able to create Easy Gluten Free Chocolate Macaroons.
* I followed the Chocolate-Coconut Macaroons recipe I found on the Post Foods site. I slightly adapted it to fit the products I had on hand.
- 3 large egg white
- Pinch of salt
- 1/2 cup of white sugar
- 2 cups of sweetened coconut flakes
- 1 cup of slightly crushed Honey Bunches of Oats Chocolate
- 1/2 cup chocolate morsels
Preheat your oven to 350 and line a baking sheet with parchment paper
In a large bowl, combine the egg whites, sugar, and salt
Mix in the coconut and cereal
Form 2 inch or so balls of macaroon mixture and space them out evenly as the mixture will spread a little bit
Bake for 20-25 mins- macaroons will be golden brown
These macaroons are the perfect snack for people looking for a tasty gluten-free snack. They can be made inexpensively too which is a perk when eating gluten-free.
