Al Fresco® Sweet Italian Style Grilled Chicken Fajitas

Fajitas are one of my family’s favorite foods. We love them with veggies, beef, or even chicken. The hot and melty combination of ooey, goey cheese, veggies, and protein is just so hard to resist! Fajitas are one of the top foods to make my family because they are easy, quick, and super versatile. Even the Al Fresco® Sweet Italian Style Grilled Chicken Fajitas I made this past week were a hit with my family.
What made our Al Fresco Sweet Italian Style Grilled Chicken Fajitas so special this past week? Well, for one they had a special Italian flare, and are typically more Mexican-inspired in flavor. We used some really delicious Al Fresco® Gourmet Chicken Grillers which we received to try. Rather than make the obvious burger, I went with grilled chicken fajitas.
With the weather warming up, using the grill was an obvious choice. I grilled my Al Fresco® Gourmet Chicken Grillers according to the instructions and alongside my red onions, and sweet peppers. I found preparing the burgers, and veggies before the final grilling of the fajitas worked well.
After each major component was done, I assembled my fajitas, and then grilled them on hot oiled grates over medium heat for 3 minutes per side. That was enough to get the cheese hot, and meld the flavors together. I have to say, I really loved the robust flavors of the chicken patties, and thought they were super delicious and something I would also eat in a burger or alone alongside some veggies or a salad.
Here are the ingredients I used to serve 5:
- (5) Al Fresco® Sweet Italian Style Gourmet Chicken Grillers
- 1 large red bell pepper
- 1 medium red onion
- 1 cup mozzarella cheese shredded
- Fresh parsley
- salt, pepper, Italian spice for taste
- 2 tablespoons olive oil
- 10 small flour tortillas
Directions:
Grill the Al Fresco® Sweet Italian Style Gourmet Chicken Grillers according to the instructions. Once they are grilled allow them to rest for 5 minutes before slicing them up for the fajitas.
Slice veggies thinly and coat with olive oil and spices.
In a slotted vegetable grill pan vegetables until tender
Once veggies are done, assemble your fajitas, sprinkle with cheese and sour cream which is optional
My family LOVED our chicken fajitas so much! It was amazing how filling and delectable each bite really was! I am so happy I thought outside of the box for this one because they were such a hit!
