Almond Flour Herbed Crackers Recipe with Tastefully Simple Feisty Fajita Dip
As someone who has a child with a gluten allergy, sometimes I find myself in the kitchen all too often. I suppose it is not a bad thing because I do love to cook. I was looking for an herbed cracker recipe for my daughter when I came across Elana’s Pantry’s Vegan Herb Crackers. While we are not following the Vegan diet, sometimes recipes that are gluten free are also Vegan.
I really was in search for a thicker cracker that used almond flour. One that would be perfect for us to dip into hummus, or even the Tastefully Simple Feisty Fajita Dip we recently received. Sure, the dip is not gluten free, but it made for a special treat for us adults. Since we were splurging a bit with the dip, it was nice to know we had a healthier cracker to pair with it.
If you are not familiar with Tastefully Simple, they are a company that has over 80 specialty foods and gifts for everyday use. I love their gourmet dips, mixes, and seasonings. They are versatile enough for everyday use, and make for some amazing party starters. I recently got to try a few dips, and a marinade. As usual, they were so tasty, and mouthwatering–total crowd pleasers!
Our Almond Flour Herbed Crackers paired perfectly with it. The dip requires additional mayonnaise and sour cream, but can be lightened up a bit by using reduced fat varieties. While the Feisty Fajita Dip is mildly spicy, it is not at all overwhelming. Each box contains two packets so you can get two uses out of it.
- 2 cups Almond Flour -I used Honeyville Grains
- 1 tablespoon Herbes de Provence
- 1 tablespoon Olive Oil
- 1/4 teaspoon Sea Salt
- 2 tablespoons Water
Pre-heat your oven to 350 degrees
In a bowl, mix your ingredients together.
Set out two large pieces of parchment paper to roll out the dough.
Place your dough ball between both pieces of paper, and roll out the dough to 1/8 inch thick. Mine are more closer to 1/4 inch-I guess it depends on how thick you’d like them.
Using a pie crust cutter, cut your dough into squares
Transfer the parchment paper to a baking sheet
Bake for around 12 minutes or until golden brown
Allow to cool before removing from the pan
These crackers have a slightly nutty taste, and are perfect as a snack or paired with cottage cheese or a dip of your choice. We loved the Feisty Fajita Dip (non gluten free) with our toasted crackers. It was perfect, and made a great, flavorful snack!! I plan on using veggies sticks for the next batch!
