Chewy Gooey Chocolate Chip Cookies
Who doesn’t love a good, warm, chocolate chip cookie? I know chewy gooey chocolate chip cookies are a favorite in my household. We just can’t seem to get enough of them. I haven’t made my go to recipe in a while because my youngest daughter is highly sensitive to gluten. She will break out in a horrific rash if she ingest wheat based products.
When I cook with regular flour which does contain gluten, I have to do it when my daughter is sleeping. I also have to make sure that I clean up the kitchen right away, and thoroughly to not contaminate her stuff. Sure, gluten free cookies are good, but I was in a mood for my chewy, giant chocolate chip cookies..it was a must that I make them.
These cookies are so giant, and rich that one, maybe two cookies are enough to satisfy any chocolate craving. They go amazing with a tall cup or ice cold milk–these would be perfect for Santa..bet he’d love them!
Chewy Gooey Chocolate Chip Cookies Ingredients:
- 2 cups all purpose flour
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup packed brown sugar
- 3/4 cup unsalted, melted butter
- 1/2 cup white sugar
- 1 tablespoon of vanilla extract
- 1 egg
- 1 yolk of an egg
- 2 cups of semi sweet mini chocolate chips
Preheat your oven to 325 degrees
Sift the flour, salt, and baking soda
Grease cookie sheets, or you could also line them with parchment paper
In a stand mixer, or large bowl. Mix your brown sugar, butter, and white sugar. Add in you egg, egg yolk, and vanilla; beat until fluffy. Add the sifted powdered ingredients mix well. Turn off your mixer, and add your chocolate chips using a wooden spoon, or spatula-mix by hand.
Drop about 1/4 cup of dough onto your cookies sheet. I fit about 6 cookies per standard sized baking sheet-about 3 inches apart. Bake for 15-17 minutes until edges are golden brown. Remove from sheet to cool on a wire rack.
