Chewy Oatmeal Raisin Bars Recipe & This Week’s Shaw’s MyMixx Savings
This week marks the second week that I was able to save big on groceries thanks to the Shaw’s MyMixx Savings Program. Last Friday, I went to my local Shaw’s Supermarket and spent $89.22, but I saved almost 50% ($87.31). Between the MyMixx Savings coupons, in-store promotions, and sales; I scored really big! Now that I am on week two of using the MyMixx Savings Program, I have to say there is very little I don’t like about it! In fact, the only hiccup I see on their part is that my first week’s data did not transfer into my MyMixx dashboard. However, quite a few of my friends had the same issue, but it seemed to resolve itself with the second week’s savings data.
Not that big of a deal, but worth mentioning just in case it may have happened to you.
A few things I am loving about MyMixx are the obvious hassle free savings, the shopping list feature, and the easy to find sales flyers. I also LOVE the Recipe Box because I can search and save recipes that I’d like to make for my family. I have found so many that I have either adapted, or been inspired by. I love this feature so much because cooking and baking are two of my biggest passions.
So that brings me to my recipe for the day. I found a delicious recipe for Chewy Oatmeal Spice Cookies in the Recipe box. I love that I can narrow down my results by sodium, fat, and sugar intake. I wanted a “better for you” dessert so these looked perfect. I decided to adapt them into Chewy Oatmeal Raisin Bars for my kid’s lunch snacks.
- 2 1/4 cup Old Fashion Oats
- 1 cup unbleached white flour
- 1/2 teaspoon baking soda & baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup brown sugar
- 2 tablespoons orange peel zest
- 6 tablespoons vegetable oil
- 3 large egg whites
- 1 teaspoon vanilla extract
Pre-heat oven to 350 degrees
In a large bowl, mix together the dry ingredients.
In a smaller bowl whisk the egg whites, oil, extract, and orange zest until fluffy.
Add the wet ingredients into the dry ingredients, and mix thoroughly.
The batter will be on the dry side, and will need to be pressed into a parchment lined 9 x 9 baking dish.
Bake for 20-25 minutes or until edges are golden brown.
Remove bars by grasping both edges of parchment paper, and move them to a cooling rack; allow to cool for one hours before cutting.
These Chewy Oatmeal Raisin Bars were the BEST I have EVER had! Love that I was inspired to add orange zest and nutmeg to make these extra delish!
