15 Minute Salmon Salad with Cilantro Greek Yogurt Dressing

Lately, between all the work of buying and selling a home, I have been so unmotivated to cook at home. I guess you could say the thought that my stove and kitchen are about to be someone’s else’s makes me feel a bit uncomfortable. The stove, and kitchen are just so perfectly cleaned now that I would hate to mess them up.
My healthier lifestyle has been taking a back seat to the current chaos and I hate it!
Take out only goes so far when you are trying to eat healthy so that is basically limited to a place or two. Thankfully, Gorton’s Seafood has come to the rescue. My husband and I loved baked or grilled salmon so their Classic Grilled Salmon is perfect for quick week night meals.

I love the smoky, grilled flavor and the tender flaky portions. I actually prepare them in the microwave which take literal minutes!
With the summer season and lack of cooking ambition salads have become my go-to veggies source. I knew I wanted to pair my salmon with arugula, and seasonal salad veggies but I wanted a fresh, and light dressing. I aim to have high-protein meals so rather than slather my salad in unhealthy fats, I remembered that Greek Yogurt is the perfect dressing base.
That is where this Cilantro Greek Yogurt Dressing comes into play.
I have always loved cilantro lime cream sauce so I decided to tweak the recipe to make a better-for-you dressing.
Here are the ingredients you’ll need to recreate this refreshing dressing (or dip):
- 1 healthy bunch of cilantro washed and stems removed
- 1/4 cup of extra virgin olive oil
- 1 tsp of garlic powder
- 1/2 tsp of sea salt
- 1/2 tsp of ground black pepper
- 1 cup of thick, plain Greek Yogurt
- Juice of one large lime
Directions:
Add your yogurt, lime juice, oil, cilantro, and spices to a food processor.
Blend until smooth and creamy.
Spoon into a resealable bowl or container.
Drizzle over salad and fish for a tangy, fresh, and flavorful dressing!
This Cilantro Greek Yogurt Dressing is sooo good with not only Gorton’s Classic Grilled Salmon, but also on chips, as a dip, over grilled chicken…the possibilities are endless.
I warn you that it is soo good, but at least it does not have the guilt with it!

Greek Yogurt is an awesome product. We use it in all sorts of recipes in our household. I never thought to use it to make dressing before though.
