One of my all time favorite foods are avocados. I never had the pleasure of trying them as a child because my parents did not care for them.
My love of avocados started to blossom when I had my second daughter and tried guacamole for the first time. Let’s just say it was love at first bite. Now, for the past 7 years I have been enjoying avocados weekly.
When you are trying to reduce processed foods, dairy, and sugar; avocados become the perfect diet staple.
According to a survey by Fresh Avocados – Love One Today®, over 75% of the fat in avocados is unsaturated (monounsaturated and polyunsaturated fats), making them an energy packed nutritious addition to your diet.
Despite their lack of sweetness, avocados are actually a fruit. They are a nutrient booster, and contribute nearly 20 vitamins, minerals and phytonutrients. This is especially helpful for my picky kids who will only eat certain foods that are visually appealing. They have no idea what I put into their Citrus Infused Green Smoothie, but they know they are yummy.
Avocados are so versatile and can be used in salads, baked goods, puddings, and even beauty products. I often feature avocado-based recipes because I love avocados *that* much!
Since I often feature avocado lunch or dinner recipes, I wanted to shed some light on 3 Dairy-Free Avocado Breakfast Ideas.
Avocado Toast: Avocado toast is a go-to breakfast of our’s. My husband and I love splitting half an avocado each in the mornings. We smash the avocado with a fork and then add some crushed red pepper and a little sea salt. Then, we spread the mashed avocado onto some toasted rye bread. This is a filling and tasty breakfast.
Avocado Banana Muffins: Made with wholesome ingredients, these avocado banana muffins are not only light and fluffy, but scrumptious. They are a favorite with my kids and feature creamy banana and avocado for extra nutrition. Get the full recipe on our site.
Citrus Avocado Smoothie:
Made with avocado, banana, and orange; this shake is perfect for sunrise. I love using whole orange peel in my shakes for the ultimate vitamin-c boost. I do not mind the peel and feel like it provides extra flavor.
Ingredients:
- Half an avocado
- 1 large ripe banana
- half of a small orange cut into quarters (peel on)
- 1/2 cup of almond milk
- 1/2 cup of ice cubes
Directions:
In a blender, combine the avocado half, orange quarters, banana, almond milk, and ice cubes. Blend until creamy and combined.
Pour into two large glasses and top with additional orange peel or zest
Enjoy!
