Grilled Fish, Cole Slaw, and Avocado Tortilla

I know every year I start off my year with certain goals, and things I want to achieve and stick to in the New Year. Most of the time I fall off the bandwagon half way throughout the year.

That folks brings me to my recipe that I hope inspires you to eat a little healthier. My Gluten Free “Open Faced” Grilled Fish, Cole Slaw, and Avocado Tortilla was so delicious, and super filling! I made my own coleslaw to lay my fish over, and it was just so fresh, crunchy and delicious! I love grilled fish and avocado paired so I added those, some cherry tomatoes, cheddar chunks, and served it over an Udi’s Gluten Free Tortilla.

Slice your avocado, cheese, and tomatoes
Prepare your Tortillas *some people like to bake them until crunchy, or pan fry them
This recipe was fresh, light, and very satisfying. It was loaded with heart, and brain healthy Omegas and even pleased my little ones.
