Vegetable Macaroni Salad-A Great BBQ Side Dish!
I can’t believe May is already here! In terms on cooking, that means cool meals, BBQ’s meat, and tons of salads! For our first Meatless May Challenge recipe I decided to create one of my personal favorite vegetable macaroni side dishes ever! This is my own recipe, and has been tweaked over the years. Since my daughter is gluten-free I used Maplegrove Gluten Free Elbow Macaroni.
1 diced, or shredded carrot
1 diced medium onion
1 diced medium green pepper
1/3 cup mayo
1 tablespoon sugar
1 teaspoon salt & pepper
1/4 white vinegar
Maplegrove Gluten Free Elbow Macaroni
Boil the pasta according to the manufacturer’s instructions
Dice, or shred your veggies
Once your pasta is ready, drain it, and run cold water through it, drain again
Place in a large mixing bowl, and add all the above ingredients
Mix well, and place in the refrigerator-serve chilled
Our family loves our macaroni salad, and since we discovered our youngest daughter is gluten free we’ve had to make one minor tweak to rice based elbow macaroni. This dish is sure to be a hit, and a major taste bud tantalizer. ~Enjoy your Vegetable Macaroni Salad~
