Healthy Southwest Tuna Salad Recipe *Featuring StarKist Tuna Creations®
Sometimes dinner times around her can get pretty boring. I have the tendency to make the same 6 dinners over, and over again unless I am feeling super creative. Lately, I’ve gotten sort of lazy so to speak and have not been too overly adventurous in the kitchen. Thankfully my nice shipment of StarKist Flavor Fresh Pouch® helped inspire me to make my featured “Healthy Southwest Tuna Salad” recipe.
In the past, I have eaten Southwest Chicken Salad, but never thought to swap out the chicken for tuna. I have also surprisingly never used beans or corn in a salad myself. I know, I know it is not rocket science by any means, but the combination of flavors in this dish are unbelievably good, but I never ventured into pairing them myself! With the Lenten season in full swing, this is the perfect no meat, and no stove required healthy recipe.
- 2 Pouches of StarKist Flavor Fresh Pouch® *they come in many different varieties-I loved the Lemon Pepper!
- 1 Bag of Fresh Express Garden Medley Salad *loaded with delicious veggies
- 1 cucumber
- 2 plum tomatoes
- 2 avocados
- 1 can of black beans
- 1 can of corn
- Light Sour Cream
- Mexican Blend Shredded Cheese
This recipe is pretty self explanatory and requires very minimal effort. You will want to open and drain you veggies cans, and slice your tomatoes, cucumbers and avocados right before eating. For me, this is one of them meals that I like to prepare each plate individually.
Simply garnish each plate with the salad, veggies, cheese, sour cream and tuna toppings, and serve to your family members immediately. Avocados tend to brown fast so make sure you slice it up within 30 minutes of consumption.I found that no dressing was needed due to the sour cream and cheese.
