Lemon Blueberry Muffins and a Refreshing Sangria Iced Tea #NewWayToTea

The recipe could easily be used to make a small cake as well, and is a great choice for breakfasts, snacks, or picnics.
Here is what you need to make these lemon blueberry muffins:
- 2 cups of white organic flour
- 2 teaspoons of baking powder
- pinch of salt
- 2/3 cup organic sugar
- 1 stick of unsalted organic butter
- 2 cage free large eggs
- 1 teaspoon of vanilla extract
- 1 tablespoon of lemon juice
- 1 tablespoon of lemon zest
- 1/4 cup of milk
- 1 1/2 cups of fresh blueberries
Pre-heat your oven to 350 degrees
Grease a 12 count muffin in with coconut oil or cooking spray
Whisk together dry ingredients
In a large bowl cream butter, vanilla, and sugar until fluffy
Add eggs and combine
Stir Lemon juice into milk and then add it into the mixture
Mix in flour until combined, mixture is naturally lumpy and not wet
Fold in blueberries by hand
Fill muffin tins 3/4 way
Bake for 18-20 mins or until a toothpick inserted comes out clean.
