Meatless Whole Grain Vegetable Pita Pizzas Featuring Boca Essentials
Now that Spring is officially here, I have started to lighten up my menu and opt for more vegetable based foods. Whole grains, vegetables, fruit, and high protein foods are some of my favorite staples for warmer spring days. I have to admit, I am not big on red meat, and especially despise hamburger meat. I am always the one to find that occasional bone shard, and it really grosses me out. That’s why whenever I make hamburger based dishes my family, I tend to make a meatless patty for my portion of the meal.
Over the years, I have tried probably every major meatless patty on the market. Some are super delicious, and tasty, but others are dry, and bland. Boca happens to be one of my go-to lines of meatless patties that I love to serve not only myself but my family as well. When I heard about the new Boca Essentials line I was happy to not only try it but whip up a lighter spring recipe option for my family.

I was going to incorporate the Boca Essentials into a casserole, or Shepard’s pie, but then I remembered Spring is here and I should make something easy, and healthier. I wanted to enhance the taste of the Boca Roasted Vegetables and Red Quinoa with brown rice patties and not mask their delicious flavor. That is when I decided to make Meatless Whole Grain Pita Pizzas with onion and mushroom.
Boy were they so delicious and fresh tasting! I heated the Boca Roasted Vegetables and Red Quinoa patties in the frying pan and waited until each side and a crisp golden brown crust. Then, I used my spatula and broke them up into little chunks for my pizza toppings.
The taste was so good too! These Boca Burgers were so flavorful and the roasted red peppers taste was really prevalent. I have to say, it paired well with mushrooms and onions. I am certainly looking forward to eating a grilled patty this summer!
Besides the Roasted Vegetables and Red Quinoa patties, Boca also has two other flavors in their Essentials line. The breakfast Scramble is so yummy and features potatoes, scrambled eggs and vegetables. Eat it alone, or paired with additional eggs, cheese, or within an omelet.
Looking for something a little spicy? Boca Essentials also has a very delicious Chili Relleno that is perfect alone or incorporated in Mexican inspired dishes. This flavorful patty boasts black beans, green chili peppers and brown rice. It is definitely a winner, and goes great in a taco salad!
- 1 package of Boca Essentials Roasted Vegetables and Red Quinoa Patties (10 ounce, 4 pk)
- 6 whole wheat pitas
- 1 cup of jarred pizza or pasta sauce
- 1 cup part skim mozzarella cheese
- 3/4 cup white mushrooms
- 1/2 cup white sliced onions
- Italian spices
Spray a medium size non-stick skillet with coconut or olive oil, and heat over medium heat
Add you Boca Essentials burgers and cook on each side for about 3 minutes. A golden crust will form on the patty.
Once fully cooked, chop the patties in the pan using a wooden spoon/spatula so it does not scrape your pan
Prepare an area to assemble your pita pizzas
Spoon about a tablespoon of sauce on each pizza
Covered each pizza with 1 tablespoon of cheese
Sprinkle with Italian spices.
Bake at 350 for around 8-1o minutes
These were so good, and perfect for a light dinner or lunch! I am loving this new line and will certainly be adding it to my shopping list because it is sooo yummy, and jam packed with protein!
