Peanut Butter & Graham Ice Cream Cookiewiches Recipe

Is the weather super hot where you are? I know where we live, we should be topping at least 90 degrees with some areas seeing up to 95! For us New Englanders, that is pretty hot because we were actually pretty chilly last week! To beat the heat, I turn to frozen treats that are easy to make, and sure to please the masses. My kids love slushies, ice cream, and especially the Peanut Butter & Graham Ice Cream Cookiewiches I made this past weekend.
Part of the fun of being a Malt-o-Meal Ambassador is that we get to try their deliciously flavored cereals and use them to make fun snacks. Since we are all about no-frills here at Savvy Saving Couple, I love to use Malt-o-Meal Cereals in easy to make recipes that kids can help with. Since July’s “Flavor of the Month” is Honey Graham Toasters®, I decided to use them inside my Ice Cream Cookiewiches.
Have you ever tried a cookiewich? Do you know what they are? A cookiewich is a fun way to enjoy ice cream between two cookies. Think of how yummy an ice cream sandwich is but with your favorite cookie as the “crust”. Since the weather is hot, we actually used our favorite store-bought peanut butter cookies.
Of course, you can make your own with this recipe, but I wanted a quick treat and certainly didn’t want to add ten degrees to my already steamy home.
To make prep easy, I used a parchment-lined baking sheet that I actually had in the freezer for about an hour before using. Since I was working with ice cream, I needed a chilled area that could easily be popped back in the freezer until serving. The Honey Graham Toasters® cereal is so yummy, crunchy, and sweet so it paired well with golden vanilla ice cream and peanut butter cookies.
I love a good crunch factor with my sweet treats so the Malt-o-Meal Honey Graham Toasters cereal was ideal with some white chocolate chips. Each cookiewich got a scoop of vanilla ice cream, some crushed Honey Graham Toasters®, a few chocolate chips, and I popped them back into the freezer until serving. I made a few extras and placed them in freezer bags for next time.
Want to make these Peanut Butter & Graham Ice Cream Cookiewiches? Here is what you will need:
Ingredients:
- 1 cup of Malt-o-Meal Honey Graham Toasters® cereal
- Vanilla ice cream
- Your favorite peanut butter cookies
- 1/2 cup white chocolate chips
On a frozen cookie sheet (freeze for about an hour before using) lay out your cookies on parchment paper
Place one small scoop of golden vanilla ice cream between each cookie half, and close with the topper cookie
Roll edges of your cookiewich in the crushed Malt-o-Meal Honey Graham Toasters® cereal, and white chocolate chips.
Place in the freezer until serving-you can keep them right on the pan if your freezer is large enough.

I have not even tried them all yet, but this week I have been enjoying not only the Honey Graham Toasters® but also the Frosted Flakes for breakfast…yum!!
