Quick & Easy Philly Steak & Peppers Rice

Now that the warmer weather is here quick meals are a must. My kids are at the point where they only have about 7 weeks of school left, and summer vacation is on all of our minds. Things are picking up around here between work schedules, travel and life; so I have not been able to spend as much time in the kitchen as I’d like.
That is ok though because I have been utilizing lots of cooking shortcut ingredients like Knorr® Selects. I am all about easy meals these days so this Quick & Easy Philly Steak & Peppers Rice (which takes about 15 total mins to make) is my kind of meal. Let my family think I have spent hours in the kitchen when in reality, the most work I have done is chopped a few peppers, onions, some meat, and cooked them along side some Knorr Selects.
The beauty about the Quick & Easy Philly Steak & Peppers Rice is you can cook the ingredients alongside each other to save time. If you are feeling super productive, and have the time you can even slice your peppers, onions and meat ahead of time. As you wait for your Knorr Selects Rice to boil, you can pan-fry your meats and veggies making this meal mega quick!
Since we are a family of 5, I have doubled up the recipe to accommodate us for leftovers. I love leftovers because Jared and the kids can take them for lunch the next day which saves me time and money.

For this Quick & Easy Philly Steak & Peppers Rice I used two packages of Knorr Selects White Cheddar Broccoli Rice which was creamy, and perfectly cheesy. The rice really complemented the steak, peppers, and onions making it a quick, easy, and flavorful meal!
Here is how to make this Quick & Easy Philly Steak & Peppers Rice:
6 Mini rainbow peppers sliced thin
2 medium sweet onions sliced thin
1 1/2 lbs of sirloin steak sliced thinly
2 tablespoons of olive oil for cooking
2 packages of Knorr Selects Rice + Ingredients needed to prepare (milk, water)
Slice your meat and veggies thinly, keep them separated.
In a stock pot, add your milk, water, and oil for the Knorr Rice *see package for complete details). Bring to a boil. Once it reaches a boil, simmer on medium/low heat for 10 minutes.
Heat a large frying pan with 1 tablespoon of oil, and add your steak to it. Season according to your taste.
Cook steak to your desired level of done-ie. medium rare, well done, etc.
Remove steak from pan, and set aside.
Add remaining 1 tablespoon of oil to the heated pan and then add veggies.
Stir-fry for about 5 minutes until veggies are soft, but not mushy.
Once Knorr Selects Rice is done, add to a serving stoneware, and then top with the steak, onion, and peppers.
