Strawberry Banana Freezer Jam
As the “Canning Challenge” comes to a wrap, I wanted to do some freezer jam recipes. I am a huge fan of freezer jams because they eliminate the need to officially can and process the contents. They are also easy to make, and are a great way to use overly ripened fruits. The recipe is really so simple, and took me all of about 30 minutes to make from start to finish.I made a few pints of this because it is perfect for my picky kids, and son.
Strawberry Banana Freezer Jam Recipe:
1 package of Ball Pectin
4 ripe bananana
2 pints of ripe strawberries trimmed, washed, halved
1 cup sugar ( I used very ripe fruit so I used less sugar)
Wash, berries, remove stems, and halve
Cut banana into three pieces
Add to food processor-process until smooth
Mix sugar, and pectin in a separate bowl
Stir pectin, and sugar into pureed fruit-mix well for around 2-3 minutes
Allow jam to thicken up in your bowl for a half hour
Transfer to mason jars, freezer bags, containers-Freeze, or enjoy immediately-this will stay good in the freezer for around 3 weeks-it will last much longer in a deep chest freezer (about 1 year)
