Tomato, Corn, and Black Bean Salad Recipe

Now that the Summer is here, I am really starting to get creative with all the fresh herbs and spices that I have handy. Incorporating fresh vegetables into my meals is very important to me because I love to feed my family as healthy as possible. Having a window box of fresh herbs has also been allowing me to eat fresh, and tasty meals. That is why I thought it would be great to share a fresh and easy light summer dish with you all!
Here is what you will need to make Tomato, Corn, and Black Bean Salad:
- 2 Ears of sweet corn
- 1 can of black beans
- 1 large beefsteak tomato chopped
- 1 large cucumber diced
- 6-7 sprigs of cilantro
- 8 basil leaves
- 2 tablespoons balsamic vinegar
- 1/3 cup extra virgin olive oil
- salt, pepper to taste
- In a stock point flash boil your sweet corn for 5 minutes. Remove from water, allow to cool
- Using a sharp knife, remove the corn kernels from each cob; set aside in a large glass bowl
- Peel and dice your cucumber
- Chop the tomato into little cubes
- Dice the cilantro and basil
- Open your can of beans (loved my can opener) and drain
- Pour into the glass bowl, and add other veggies and herbs
- In a separate bowl, whisk together the salt, pepper, vinegar, and oil
- Pour it over the top of your veggies, and mix together
- Serve chilled-hearty enough to be considered the perfect light summer meal.
