Quick Pecan Prune and Feta Salad with Spinach

A healthy, sweet and savory summer salad that features fresh veggies, feta, pecans, and prunes.

Ingredients

  • 1 cup romaine lettuce leaves chopped
  • 1/2 cup spinach leaves
  • 1 tablespoon feta cheese
  • 6 whole pecans
  • 4 whole Mariani Probiotic Prunes
  • 1 tablespoon shaved onion
  • 1 tablespoon shaved cucumber
  • 6 whole cherry tomatoes
  • 2 tablespoons seasoned rice vinegar

Instructions

  • In a medium bowl, toss all the ingredients together and enjoy chilled. You can also prepare this the night before or meal prep.
