Breakfast Nachos

These breakfast nachos are made in a skillet and feature all the breakfast meats, eggs, and plenty of cheese and sour cream. They are a fun brunch idea for friends and family to enjoy.

Equipment

  • 12" Skillet

Ingredients

  • 1 cup corned beef hash
  • 8 ounces breakfast sausage links
  • 5 eggs scrambled
  • 8 ounces bacon
  • 1/2 cup cherry tomatoes halved.
  • 4 cups tortilla chips
  • 2 tbsp jalapeno
  • 2 tbsp cilantro
  • 1/3 cup sour cream

Instructions

  • Scramble your eggs, and cook your breakfast meats.
  • Spray your skillet with non-stick spray.
  • Arrange your tortillas chips in the pan evenly.
  • Add HORMEL® MARY KITCHEN® Hash to your chips.
  • Top with additional breakfast meats.
  • Add eggs, and jalapenos.
  • Top with Salsa, followed by cheese.
  • Bake at 350 degrees f. for 15 minutes until cheese is melted.

Notes

Brunch Nachos Substitutes:
You can sub in diced Canadian bacon, or fresh corned beef hash.
Jalapenos are optional.
