Ingredients

  • 12 ounces jumbo stuffed shells
  • 8 ounces marinara sauce
  • 6 ounces mozzarella cheese
  • 12 ounces low fat cottage cheese
  • 12 ounces low fat ricotta cheese
  • 6 ounces Wright® Brand Hickory Smoked Bacon
  • 16 ounces Jimmy Dean® Premium Pork Sausage Roll
  • 1 onion yellow, medium size
  • 1 tbsp rosemary

Instructions

  • Bring a large stockpot of water to a boil and add 1/4 tsp of salt to it for flavor. Add your jumbo shells and boil until al dente.  
  • In a large frying pan, add your diced onion, chopped bacon, and sausage roll.  
  • Pan-fry the meats and onion until fully cooked. The bacon should be on slightly crisp unless you really like it super crisp. If you want it super crisp, cook it desperately and add to the cheese mixture last. 
  • Add your cottage and ricotta cheese to a large mixing bowl. Add half the fresh rosemary.  
  • Once your meat and onion is done cooking, add it to the cottage cheese, and ricotta cheese.  
  • Mix well and set aside until the pasta is done.  
  •  When your pasta is done, drain it in a colander and rinse it with cool water; drain. 
  • To fill shells, use a large metal spoon and fill each shell with about 2 tablespoons of filling.  
  •  Repeat until all the shells are stuffed.  
  • Add sauce carefully to each and then top stuffed shells with mozzarella.  
  •  Top with the rest of the rosemary. 
  • Bake at 350 degrees for 25-30 minutes.

To freeze this meal, prepare the meal and cover it carefully with air-tight packaging. I recommend using a 9 x 13 aluminium foil pan when freezing meals to avoid any potential issues with shattering glass.
You can freeze this for up to 3 months. I have made extra shells to freeze plenty of times in my lifetime. Cook at 350 for 45 minutes to reheat.
You can use more mozzarella cheese if you wish or more bacon strips. I tried to make this a wee bit less calorie-rich while still maintaining delicious flavors.
