Thanksgiving Leftovers Casserole

The perfect recipe for using up Thanksgiving leftovers. A delicious casserole made with leftover turkey, stuffing, mashed potatoes, cranberry sauce, mayonaise, and shreaded cheese.

Ingredients

  • 4 cups leftover stuffing
  • 4 cups turkey shredded
  • 3/4 cup mayonnaise
  • 1/4 cup whole berry cranberry sauce
  • 2 cups mashed potatoes
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  • Preheat oven to 375F.
  • Prepare a casserole dish by spraying it with non-stick spray.
  • Spoon in 2 cups of the stuffing into casserole dish.
  • Top with the shredded turkey.
  • In a separate bowl, combine 1/4 cup of mayonnaise and cranberry sauce.
  • Add the cranberry sauce and mayonnaise mixture to the top of the turkey.
  • Combine remaining 1/2 cup Mayonnaise, mashed potatoes and shreaded cheese in large bowl. 
  • Add evenly to the top of everything in the casserole dish.
  • Evenly spoon in the remaining 2 cups of stuffing over the top of everything.
  • Bake for 40 minutes or until heated thoroughly.
  • Let stand 10 minutes before serving.
