Ingredients

  • 1 pound 80/20 ground beef
  • 12 whole lasagna noodles
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 14.4 ounces canned diced tomatoes
  • 16 ounces ricotta cheese
  • 16 ounces cottage cheese
  • 1 cup marinara sauce *your favorite pasta sauce
  • 8 ounces mozzarella cheese grated
  • 1 tablespoon fresh basil chopped

Instructions

  • Boil your noodles until they are al dente. Remove noodles and rinse them with cold water; drain.
  • Preheat your oven to 350 degrees Fahrenheit.
  • Pan fry the hamburger (add spices) and drain any excess grease; set aside. Add meat mixture into a large mixing bowl.
  • Add the cottage cheese, ricotta, and diced tomatoes, to your meat mixture. Mix all the ingredients together-set aside
  • Spray your muffin tins with non-stick spray.
  • Cut 2 inches from each lasagna noodle. Form the lasagna noodles around the muffin tin to create a well.
  • Fill with the meat mixture. Add an even amount of pasta sauce to each roll up. Sprinkle each evenly with cheese.
  • Place them in the oven to bake for 20 mins at 350 degrees Fahrenheit.
  • Sprinkle with freshly chopped basil before serving. Allow rolls to rest for 10 minutes before plates.

HOW TO FREEZE
These can be frozen once fully cooled. Add them to a parchment lined baking sheet and freeze until solid (about 2 hours). Once frozen solid, add rolls to a freezer-safe bag or container. Add heating instructions and date for up to 3 months. To reheat, add rolls to a muffin tin and bake for 20-30 minutes or until thoroughly warmed.
