Buffalo Chicken Crescent Dough Bites

Jumbo crescent rolls are filled with buffalo chicken tenders, ranch, cheddar, and celery bits. These are then baked to a golden brown perfection in a muffin tin. Each bite is bursting with cheesy, tender, spicy flavor making this a perfect appetizer.

Ingredients

  • 12 ounces Pillsbury Grands! Big & Buttery Crescent Dough Rolls
  • ½ cup ranch dressing
  • ¼ cup celery sliced thinly
  • 8 ounces buffalo chicken bites cooked *see substitutions
  • 4 ounces cheddar cheese shreds
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon Italian herbs

Instructions

  • Bake your chicken according to the package instructions. Mine was about 20 minutes. Once chicken is done, set aside.
  • Preheat oven to 350° F. Grease your muffin tin.
  • Add your crescent dough to 8 muffin tin slots. You will spread out each triangle as pictured.
  • Add ranch dressing to each piece of dough followed by 1/2 a tablespoon of celery.
  • Add an even amount of cheddar cheese to each.
  • Finish each with a piece of prebaked chicken.
  • Wrap up corners of the crescent to form a ball. They do not have to be fully covered. The muffin tin will help them keep their shape as they bake up.
  • Melt butter & mix with herbs. Brush crescents with melted herb butter.
  • Bake 12-15 mins or until golden brown. Serve warm.

SUBSTITUTIONS
As with most recipes, there is some wiggle room for this recipe that will still produce pleasing results.
Chicken- You can use any brand of baked, fully cooked frozen buffalo chicken. Additionally, you can use plain frozen chicken and add your own buffalo sauce. Simply bake the chicken, and coat in the sauce.
If you prefer to use fresh chicken, cook chicken tenders in bite-sized pieces, and toss with buffalo sauce. Additionally, you can use leftover chicken liked rotisserie chicken. They key is to pretty much cook and toss with wing or buffalo sauce.
Cheese– You can use small cubes of cheddar, slices cut into quarters, shredded cheddar, or mozzarella.
Celery- You can leave this out, but we love the crunch it provides for the “full effect”.
Dressing- We used ranch because our kids do not like blue cheese, but I do believe blue cheese dressing or small chunks could be beneficial–the choice is yours.
Crescent dough- I prefer the Pillsbury Extra Large Crescent Rolls, but you can use standard size–they will just be smaller in size.
STORING
These Buffalo Chicken Crescent Dough Bites taste best when warm and fresh. However, you can freeze them after they have fully cooled.
Simply bake and allow them to fully cool before adding them to an airtight, freezer-safe bag. To reheat, allow them to thaw and bake them in the oven at 350 degrees for 3-5 minutes to heat up.
