Pineapple Pasta Salad with Ham

A sweet and tangy pasta salad that is loaded with delicious flavor. The pineapple, ham, and cheddar cubes pair so perfectly together making for a scrumptious cold pasta salad.

Ingredients

  • 8 ounces ham steak cubed
  • 8 ounces cheddar cheese cubed
  • 16 ounces farfalle pasta cooked al dente & rinsed
  • ½ cup shredded carrots
  • 3 whole green onion bunches 9 individual stalks, chopped
  • 20 ounces pineapple chunks drain and reserve juice
  • cup red onion diced

Dressing

  • ½ teaspoon garlic powder
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon ground black pepper
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ cup pineapple juice

Instructions

  • Cook pasta according to package instructions. Drain and rinse with cold water.
  • Add ham, cheese, pineapple chunks, carrots, green and red onion to a large bowl.
  • In another small bowl, whisk the garlic powder, vinegar, mustard, pepper, sour cream, mayonnaise, and pineapple juice until creamy.
  • Pour the dressing over the salad, and mix to combine.
  • Cover, and chill in the refrigerator for at least one hour. Enjoy!
