Halloween Monster Cookies

Loaded with pantry staples, these oat & flour based Classic Monster Cookies require no chill time and produce a thick, chewy, and delicious cookie that can be enjoyed anytime of year.

  • Preheat oven to 350°F. Line two medium baking sheets with parchment paper.
  • In a small bowl, whisk the flour, baking soda, oats, and salt.
  • In a stand mixer fitted with the paddle attachment, cream the butter, granulated sugar, and brown sugar until creamy. Add in the egg, extract, and peanut butter, and beat until creamy and fluffy.
  • Slowly add in the dry ingredients and mix until combined.
  • Fold in the M&Ms and chocolate chips.
  • Using a 2 tablespoon sized cookie scoop, scoop balls of dough and place them 2 inches apart on the parchment-lined cookie sheet.
  • Bake at 350°F for 10-12 minutes. Cookies will be lightly golden brown, and feel slightly firm. It is okay if they feel a little under baked as they will firm up as they cool.
  • Transfer cookies to a wire cooling rack and cool for 10 minutes.
