Chicken Salad with Grapes, Cranberries, & Walnuts Recipe
A sweet and savory chicken salad recipe that features pan-fried, seasoned, white meat chicken, green grapes, walnuts, and dried cranberries.
Servings: 6 servings
- 1/3 cup chopped celery
- 1/2 cup walnuts chopped
- 2 tbsps sweet onion diced
- 1 cup green or red grapes sliced
- 1/4 cup dried cranberries
- 1 1/2 lbs white meat chicken breast cubed
- 1 tablespoon EVOO *to pan- fry chicken
- 3/4 cup Hellmann's Mayo
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
Season the chicken breast with onion powder, garlic powder, salt, and pepper.
Add oil to a medium skillet, and then chicken breast.
Pan-fry seasoned chicken for 7-10 minutes until clear juices run free.
In a large bowl, add chicken,grapes, cranberries, walnuts, onions, celery, and mayonnaise.
Toss all ingredients until combined.
Place in refrigerator for at least 1 hour to chill.
