Flavorful & Easy Shrimp Scampi, Spinach, and Tomato Linguine
A buttery, garlic shrimp tossed with crushed red pepper, fresh garlic, tomato, and spinach served over fresh linguine all in 30 minutes!

- 2 boxes Gorton's Simply Bake Shrimp Scampi Cook according to box instructions
- 2 cups baby spinach
- 4 whole plum tomatoes diced
- 2 cloves fresh garlic minced
- 1/4 tsp crushed red pepper flakes
- 1 package Linguine cooked al dente
Cook Gorton's Simply Bake Shrimp according to box instructions in oven.
Boil pasta water and cook pasta until al dente
When the shrimp has just about 5 minutes left to bake, add garlic, and olive oil to a large skillet and cook for 1-2 mins over medium heat until fragrant.
Add in diced tomato, and spinach and cook for 2 minutes on low heat.
Once shrimp is done, carefully open each bag and add the contents to the skillet, stir over low heat for 2 minutes.
Strain pasta, and then either add to the large skillet, and mix, or plate pasta and serve scampi over each portion.
Enjoy with garlic or crusty bread!
