Keto Eggplant Pizza Recipe with Shrimp

A delicious, keto-friendly pizza recipe that is low in net carbs. Eggplant is the perfect medium for keto style veggie pizza. The Gorton's Shrimp Scampi adds lots of easy flavor to this pizza!

Ingredients

  • 8 slices eggplant sliced circular, a little over 1/4 inch in thickness.
  • 3/4 cup low-sugar marinara Rao's Marinara Sauce is our fave
  • 8 slices provolone cheese Can use any cheese you really like
  • 8-10 whole basil leaves Sliced thinly, or kept whole
  • 3/4 cup cherry tomatoes sliced in halves
  • 1/4 cup whole white mushrooms *can keep whole or chop
  • 1 tsp Italian herbs to sprinkle on each pizza
  • 1 package Gorton's Simply Bake Shrimp Classic Scampi *Can bake or pan fry ingredients until fully cooked. (about 5 minutes over medium/high heat)

Instructions

  • Prepare shrimp according to package instructions. An alternate way to cook that I have personally tested myself is to add the package to a medium skillet and cook over medium/high heat for 5 minutes until shrimp are pink.
  • Heat oven to 350 degrees fahrenheit for the eggplant pizzas.
  • Slice eggplant in 1/4" thick circles, and pat them dry.
  • Add them to a parchment-lined baking sheet.
  • Cook one side for 5 minutes and flip.
  • Once you flip, add a tablespoon worth of marinara to each, 1 slice of provolone, some tomato, mushroom, and dry herbs.
  • Bake for another 4 minutes.
  • Remove from oven and add shrimp during last cooking minute.
  • Top with fresh basil and enjoy warm.

Notes

After cooking the shrimp, allow them to rest in the garlicky sauce the pan creates for maximum flavor. If you do not want to dry the shrimp out, you can add them during the last minute of cooking, or brush them with extra garlic-butter.
