BLT Pasta Recipe

This warm and delicious BLT Pasta recipe features pan-fried bacon, sauteed tomatoes, and spinach. Topped with garlic butter bread crumbs, it is a delicious comfort meal your family will love.

Equipment

  • 6 quart stock pot
  • small skillet
  • large skillet

Ingredients

  • 10 ounces Applewood Smoked Niman Ranch Bacon chopped
  • 1 lb penne pasta
  • 1 pint grape tomatoes
  • 3 cups spinach
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Garlic Bread Crumbs

  • 1/4 tsp garlic powder
  • 1/2 cup panko crumbs
  • 1 tbsp butter

Instructions

  • Add hot water to the stock pot to boil pasta. I typically fill my 6 qt stockpot halfway with water.
  • Add chopped bacon to a large skillet and cover the pan loosely with foil to prevent grease spatter from going all over.
  • Once the pasta water is boiling, place penne into the pan and cook until al dente.
  • Cook bacon over medium-high heat until crispy. Once bacon is crisp, turn off heat, and use tongs to move it to a paper towel-lined plate.
  • Add tomatoes to the pan add salt & pepper. Cook using the bacon grease until tomatoes burst-about 2 minutes.
  • Add spinach to the pan and cook over low heat.
  • Strain pasta and add it to the skillet with the tomatoes, and spinach.
  • Stir pasta, spinach, and tomato--add in bacon
  • Serve warm!

Notes

Leftovers can be refrigerated and heated in the microwave until warmed. This recipe is best consumed within 3 days. 
Additional Ingredients 
Chopped onion may be added  to this recipe after the bacon has been removed. 
You can additionally use arugula instead of spinach.
Parmesan or Romano cheeses would make a lovely topping. 
Cooking Tips
A large sheet of heavy duty foil over the skillet will keep grease spatter from going all over.
