Easter Bunny Bait

A colorful, peanut-free cereal-base snack mix that is candy coated and tossed in powdered sugar. Candy additions like Spring Mix Sixlets, mini marshmallows, & white chocolate chips . This mix is the perfect treat for your child to leave for the Easter Bunny in exchange for a basket.

Ingredients

  • 9 cups rice corn cereal
  • 1/2 cup white chocolate chips
  • 1 cup mini marshmallows
  • 12 ounces yellow candy melt wafers melted
  • 1 1/2 cups powdered sugar
  • 4 ounces pink, blue, yellow wafer melts
  • 1 cup Spring Mix Sixlets
  • Wilton Mini chicks and Bunnies optional

Instructions

  • Add 12 ounces of yellow candy melts to a microwave-safe glass bowl.
  • Microwave at 50% power in 30 second intervals stirring in between each. Mine required 3 separate 30-second cook times with a stir in-between each until creamy.
  • Add rice cereal to a large zippered freezer bag or large bowl.
  • Pour melted candy over and coat all pieces.
  • Add powdered sugar in and toss pieces until coated. It is okay if every piece is not evenly coated.
  • Pour snack mix onto a large baking sheet.
  • Add in marshmallows, morsels, wafer, and Spring Mix Sixlets.
  • Toss to combine.
  • Add snack mix to goodie bags, or store in a large zippered freezer bag.

Storage

This mix lasts up to 7-10 days when stored in an airtight container in a dry, cool place.
You can mix and match what mini candies you add in to suit your preference. Mini pretzels, popcorn, and chocolate candies or eggs could also be fun. 

How to make this with peanut butter

You will skip the 12-ounces of wafers melted and use these ingredients:
  • 1 cup semi-sweet chocolate morsels
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 4 tablespoons of unsalted butter
  • 2 cups powdered sugar 

Directions 

Add the creamy peanut butter, chocolate chips, butter, and extract to a medium-sized, microwave-safe bowl.
 
Microwave in 30-second intervals until creamy. If for some reason, your chocolate gets a little thick, add in additional butter.  
 
Add 9 cups of Chex mix to a jumbo mixing bowl.
 
Once your mixture is creamy, pour it over the 9 cups of Chex Mix cereal.
 
Mix cereal and chocolate mixture with your spoon gently enough to coat each piece with the chocolate peanut butter mixture. 
 
Once the cereal is fully coated, add 2 cups of powdered sugar to a large 1 gallon zippered bag and shake half of the coated cereal. You will need to do this in 2 separate batches
