Cinnamon Vanilla Rice Pudding

Made on the stove top with quick cooking rice, this rice pudding desserts is loaded with comforting and delicious flavors of cinnamon and vanilla. Top with whipped cream, and extra cinnamon for an extra delicious and inexpensive dessert.

  • In a 5 quart stockpot, bring 1 cup of quick-cook white rice and 3 cups of milk to a slow boil over medium heat-stir constantly. About 10 minutes.
  • Once milk begins to bubble, reduce heat to medium/low and stir occasionally for 10 minutes; rice will expand.
  • Remove rice from heat and quickly stir in sugar and vanilla extract and one egg at a time. You must do this swift and get it well combined or the eggs will scramble.
  • Mix in cinnamon and allow to cool in servings dishes for at least 20 minutes-this will also help thicken the pudding a bit.
  • Serve with optional whipped topping and additional cinnamon if requested.

Notes

For conventional long grain, white rice. 
Cook over medium-low heat for 25 minutes-stir frequently. If you do not stir frequently, your rice will stick to the bottom of the pot and burn. 
Once milk begins to bubble, reduce heat to low and stir occasionally for 10 minutes; rice will continue to thicken and expand.

To add raisins, add 1/2 cup to step one with milk & rice.
For a lemon flavored rice, add 1/2 tablespoon of lemon extract.
