Cheesy Shrimp Scampi Dip Appetizer

This flavorful, cheesy dip features frozen shrimp scampi, a creamy blend of sour cream, mayonnaise, and cheeses. It is a warm, cheesy dip that is a crowd-pleasing appetizer. Serve it warm with herbed crostini, bagel chips, torn bread, or crackers.

Ingredients

  • 8 ounces cooked shrimp scampi (if using Seapak Frozen shrimp scampi you will need two boxes total, and ¼ cup of sauce reserved. Ounces are after cooking for these.
  • ½ cup mayonnaise
  • 1 cup sour cream
  • 8 ounces cream cheese softened
  • 8 ounces mozzarella cheese shredded, and divided
  • 8 ounces Parmesan cheese shredded, and divided
  • 1 tablespoon parsley chopped

Herbed Crostini

  • 1 medium baguette sliced into ¼" rounds
  • 2 tablespoons butter melted
  • 1 tablespoon Italian Herbs

Instructions

Herbed bread rounds

  • If making your own herbed bread rounds, preheat oven to 375°F. Slice baguette into 1/4″ inch bread rounds. Brush each with melted butter, and sprinkle with herbs. Bake for 8 minutes on the bottom oven rack. Bread will be golden browned and crunchy; set aside. Reduce oven temperature to 350 degrees F. for the dip.

Shrimp Scampi Dip

  • If using SeaPak Frozen Shrimp Scampi, Add the shrimp to a medium skillet, and heat until butter is melted, and shrimp is no longer grey; about 6-8 minutes over medium heat. Once prepared, reserve 1/4 cup of liquid with the shrimp; discard the rest once cooled in the trash. * see notes if using fresh shrimp scampi.
  • Shred the cheeses, and reserve 4 ounces of each for topping the dip with before baking.
  • Mix together the room temperature cream cheese, mayonnaise, sour cream, parsley, Parmesan, and mozzarella cheese. Add the shrimp, and 1/4 cup of reserved buttery liquid. This will get the dip extra flavor.
  • Add the dip ingredients into the casserole dish and top with the reserved 4 ounces each of mozzarella and Parmesan cheeses. Bake in the oven for 15 minutes or until golden brown and bubbly. Serve right away, warm with bread dippers, or your choice of dipping mediums.

Homemade Shrimp Scampi
If you do not want to use frozen shrimp scampi, you can make homemade shrimp scampi. You will need the following:
    • 8 ounces of medium shrimp peeled, deveined, and rinsed. Be sure to pat the shrimp down carefully.
  • 1 tablespoon of fresh lemon juice
  • 1/4 cup of dry white wine
  • 1 tablespoon of freshly chopped parsley
  • 1/4 teaspoon of red pepper flakes
  • 1/8 teaspoon of black pepper
Cheese variations
You can use freshly grated mozzarella and Parmesan cheese, or simply buy bagged shredded cheeses. I just love how fresh cheese melts so nicely, but it is really a matter of preference.
Storage
If you want to store your Shrimp Scampi Dip, just follow these easy steps.
Due to the nature of this dip containing seafood and dairy, it will not last too long in the refrigerator. We found that this is safe to store properly in an airtight container for up to 48 hours only. This recipe as written is not freezer-friendly.
