Shredded rotisserie chicken is tossed with fresh apples, pecans, celery, dried cranberries, Greek yogurt, mayo, and simple spices. This easy to make chicken salad is quick and easy to make and produces a flavorful, colorful, gourmet chicken salad.

Ingredients

  • 16 ounces rotisserie chicken
  • 1 cup pecan halves
  • ½ cup dried cranberries
  • ½ cup celery chopped
  • 1 large Granny Smith apple cored, diced
  • ½ cup mayonnaise
  • ½ cup non-fat Greek yogurt
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt

Instructions

  • Add all the ingredients to a large bowl, and mix to combine. Cover and chill in the refrigerator for at least an hour to allow the flavors to meld. Serve on your choice of bread, or greens.
