Easy Gluten Free Lime Bars

A spin on lemon bars, these easy Gluten Free Lime Bars are a delicious dessert recipe that is perfect for the warmer weather. Featuring an almond flour crust, these bars use simple ingredients.

Ingredients

Lime Bar Filling

  • 2 large egg yolks
  • 14 ounces sweetened condensed milk
  • 1 cup fresh squeezed lime juice

Almond Flour Crust

  • 2 cups almond flour
  • 2 tbsps white sugar
  • 2 tbsps brown sugar
  • 4 tbsps melted butter (use unsalted)

Instructions

  • Preheat Oven to 350°F.
  • Grease an 8 x 8 pan, or line it with parchment paper.
  • In a large bowl, mix your crust ingredients using clean hands.
  • Firmly pat the crust mixture into the bottom of your pan, and bake for 10 minutes; remove once done and set aside on the stove top to cool.
  • In a separate bowl, mix together the lime juice, egg yolks, and condensed milk. Stir until thick.
  • Pour filling evenly into the prebaked crust, and bake at 350°F for an additional 15 minutes.
  • Allow bars to cool for at least 60 minutes before placing the warm pan in the fridge.  Chill for a few hours, or overnight before cutting. Use a wet knife to slice each square for ease of cutting.

Notes

USE A CITRUS JUICER FOR EASE!
One thing I learned while making my gluten free lime bars is that I really should invest in a citrus juicer. 2 1/2 limes later, and my hands had enough of the squeezing!! I did however enjoy the fresh lime scent that filled up my kitchen; citrus fruits produce the best scents!
TIPS FOR CUTTING LIME BARS
The parchment paper lined baking dish and wet knife really aided in cutting the perfect bars out! I totally recommend using a wet knife to cut through any squares because it allows the knife to smoothly glide through. Using a greased, and parchment lined pan also helps to keep your lime bras nice and neat, and easy to cut.
These cannot be frozen, but last for up to 5 days in the fridge, covered.
