Oatmeal Bacon Breakfast Cookies

Sweet meets savory with these bacon-filled oatmeal cookies. These oatmeal cookies are chewy with a sweet and salty kick. The flavors pair so well together!

Ingredients

  • 6 tablespoons butter flavored shortening
  • cups firmly packed light brown sugar
  • 1 large egg
  • cup whole milk
  • teaspoons vanilla extract
  • 1 cup Bob's Red Mill All Purpose Flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 3 cups Bob's Red Mill Rolled Oats
  • 1 cup chocolate chips
  • 6 slices crispy, crumbled bacon

Instructions

  • Preheat oven to 375℉.
  • Line two medium baking sheets with parchment paper.
  • In a standmixer (or mixing bowl), cream shortening, sugar, egg, milk, and vanilla.
  • In another bowl, combine flour, salt, baking soda, cinnamon, and oats.
  • Slowly add dry mixture to wet mixture.
  • Once combined, fold in chocolate chips and bacon.
  • Add rounded tablespoons of dough to your cookies sheet evenly spaced apart 2" apart.
  • Bake for 10-12 minutes or until cookies have golden brown edges. They will firm as they cool.
  • Transfer cookies to a wire rack to cool. Enjoy!
