Ingredients

  • cups pitted medjool dates
  • ½ cup crushed pecans *to create base
  • ¼ cup finely chopped pecans *for rolling balls
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 2 tablespoons vanilla protein powder
  • ¼ cup honey

Instructions

  • Add dates, whole pecans, vanilla protein powder, vanilla extract, cinnamon, kosher salt, and honey to the food processor. Pulse until ingredients are combined, and a sticky paste forms. 
  • Roll the mixture into small, bite-sized balls. 
  • Roll the balls in the crushed pecans. 
  • Place the balls on a plate or lined tray and chill in the refrigerator for 15-20 minutes to allow them to firm up.
