French Onion Chicken Casserole

Ingredients

  • pounds boneless chicken diced into small pieces
  • 10 ounces egg noodles boiled until al dente
  • 1 teaspoon dried thyme
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¼ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • cup dry sherry
  • 10.5 ounces cream of mushroom soup
  • 16 ounces sour cream
  • 1 ounce onion soup mix
  • 8 ounces white cheddar shredded
  • 1 cup French fried onions
  • 1 medium vidalia onion sliced

Instructions

  • Preheat oven to 350° F. and grease a casserole dish with nonstick spray.
  • Fill a large stock pot with water, and bring to a boil. Add the egg noodles to the pan, and cook for about 8 minutes or until al dente.
  • In a large skillet, over medium heat, add butter, and cubed chicken. Season with salt, pepper, thyme, onion, and garlic powder. Cook for 5 minutes until chicken pieces are browned.
  • Reduce heat to low and ddd in sliced onion and sherry wine. Cook until onions are tender.
  • Drain egg noodles and add them to the greased casserole dish. Add in cooked chicken, onion, onion soup mix, cream of mushroom soup, and sour cream.
  • Mix until creamy and spread the mixture evenly in the pan. Top with shredded cheddar.
  • Bake for 20 minutes.
  • Carefully remove dish from the oven and sprinkle on fried onions. Return to the oven for 10 additional minutes.
  • Serve warm & enjoy.
