Sausage, Shrimp & Vegetable Skillet
Sausage, Shrimp, & Vegetable Skillet is the perfectly light, low-fat meal that is loaded with fresh flavors. Ready in as little as 15 minutes, this fresh meal is perfect for busy weeknights.
Servings: 6 people
- 12 oz al fresco Sweet Italian Style Chicken Sausage
- 1 lb shrimp large, peeled, deveined, tail on only.
- 1 1/2 lbs yellow squash
- 1 1/2 lbs zucchini
- 1 cup bell pepper I used orange
- 3/4 cup red onion
- 3 tbsps extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp onion powder
- 1/2 lb asparagus washed, trimmed, cut into 1 1/2 inch pieces
Add veggies and chicken sausage to a bowl and toss with spice and 2 tablespoons of oil.
Add 1 tbsp of oil to your skillet and heat over medium-high heat.
Add shrimp in and cook until pink. You can add some extra salt & pepper to season these. They cook really fast (about 2 mins per side).
Once shrimp are done, remove them from the skillet, and add in 2 more tablespoons of oil.
Add in veggies & sausage, and cook over medium heat for about 8-10 minutes until veggies are slightly tender.
Add shrimp back in and mix well in the skillet, cook for an additional minute.
