Ingredients

  • 12 oz al fresco Sweet Italian Style Chicken Sausage
  • 1 lb shrimp large, peeled, deveined, tail on only.
  • 1 1/2 lbs yellow squash
  • 1 1/2 lbs zucchini
  • 1 cup bell pepper I used orange
  • 3/4 cup red onion
  • 3 tbsps extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 lb asparagus washed, trimmed, cut into 1 1/2 inch pieces

Instructions

  • Add veggies and chicken sausage to a bowl and toss with spice and 2 tablespoons of oil.
  • Add 1 tbsp of oil to your skillet and heat over medium-high heat.
  • Add shrimp in and cook until pink. You can add some extra salt & pepper to season these. They cook really fast (about 2 mins per side).
  • Once shrimp are done, remove them from the skillet, and add in 2 more tablespoons of oil.
  • Add in veggies & sausage, and cook over medium heat for about 8-10 minutes until veggies are slightly tender.
  • Add shrimp back in and mix well in the skillet, cook for an additional minute.
  • Serve warm!
