- 12 oz al fresco Sweet Italian Style Chicken Sausage
- 1 lb shrimp large, peeled, deveined, tail on only.
- 1 1/2 lbs yellow squash
- 1 1/2 lbs zucchini
- 1 cup bell pepper I used orange
- 3/4 cup red onion
- 3 tbsps extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp onion powder
- 1/4 tsp turmeric

Making this skillet meal is really easy! I love to prep my veggies in the morning and I compost the scraps. I also make my spice blend ahead of time so everything truly is easy, peasy to cook.
al fresco Chicken Sausage is such a wonderful protein to use because it is already full cooked. I love how it is so easy to stir fry with the veggies. It is fully seasoned so it doesn’t really need any additional spices. I did add plenty of spice to the veggies though for flavor and nutrition.

Sausage, Shrimp & Vegetable Skillet
Ingredients
- 12 oz al fresco Sweet Italian Style Chicken Sausage
- 1 lb shrimp large, peeled, deveined, tail on only.
- 1 1/2 lbs yellow squash
- 1 1/2 lbs zucchini
- 1 cup bell pepper I used orange
- 3/4 cup red onion
- 3 tbsps extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp onion powder
- 1/2 lb asparagus washed, trimmed, cut into 1 1/2 inch pieces
Instructions
- Add veggies and chicken sausage to a bowl and toss with spice and 2 tablespoons of oil.
- Add 1 tbsp of oil to your skillet and heat over medium-high heat.
- Add shrimp in and cook until pink. You can add some extra salt & pepper to season these. They cook really fast (about 2 mins per side).
- Once shrimp are done, remove them from the skillet, and add in 2 more tablespoons of oil.
- Add in veggies & sausage, and cook over medium heat for about 8-10 minutes until veggies are slightly tender.
- Add shrimp back in and mix well in the skillet, cook for an additional minute.
- Serve warm!
