Mini Ice Cream Cookie Sandwiches
A tablespoon-sized scoop of sweet, and creamy ice cream is tucked in-between two NABISCO Chips Ahoy! Finished off with mini chocolate chips or sprinkles these ice cream sandwiches or cookiewiches are kid-friendly and easy to assemble.

- 20 Chips Ahoy! Cookies
- ⅔ cup Ice cream You favorite choice
- ¼ cup sprinkles
- ¼ cup Semi Sweet Mini Chocolate Chips
Unwrap your NABISCO Chips Ahoy! Original Real Chocolate Chip Cookies, 0.77 oz, 18 count. You will need ten packages or 20 total cookies.
Using a tablespoon-sized cookie scooper, add one tablespoon of ice cream to the center of the bottom cookie. Add the top of half of the Chips Ahoy! Cookie to make a sandwich.
Add sprinkles to the edges of the ice cream. You can easily do this by adding the sprinkles or mini chocolate chips to a shallow dish. Simply roll the ice cream edges around until they are coated.

Storage
Once your cookiewiches are fully assembled, place them on a baking sheet and freeze them for 10-15 minutes. Once they are firm and no longer melty, wrap them in double layers of plastic wrap to store them. You can also add them to snack-sized plastic baggies. These will last about a week or so for best taste wrapped in plastic wrap or in a small bag, but will last up to 3 months if stored via a vacuum sealer--but will they really last that long?
