I love that they are so quick and easy to make! Let’s explore everything you’ll need to recreate these for your family.
Before starting this recipe, you’ll want to verify that you have the following ingredients from Walmart:
Ice Cream – You can use any variety you prefer. We used vanilla since it is so versatile.
Cookies – We used NABISCO Chips Ahoy! You can find these in a variety of sizes at Walmart including Chips Ahoy! 18 Count. These are perfect for on-the-go snacking, in lunchboxes, or pretty much anytime!
They are sturdy and easily fit a generous tablespoon-sized scoop of ice cream in between each cookie. NABISCO Multipacks are the perfectly portioned, portable snack for kids and adults. You can find them at Walmart in new larger-sized variety packs, and single to-go packs from brands like RITZ, Chips Ahoy, and OREO.
Add-ins – We love Mini Semi-Sweet Chocolate Chips or standard sprinkles to add a classic touch to our simple ice cream sandwiches.
Equipment and Supplies Needed
We used the following equipment and supplies to make this recipe. Items that are optional or can be substituted will be noted.
- Rimmed Baking Sheet – To Freeze these sandwiches if you plan on making some ahead of time.
- Plastic baggies – Snack sized baggies can be used to store these for a quick after-school snack.
- Tablespoon-sized cookie scoop – This was the perfect sized tool to get the ideal portion of ice cream in-between each Chips Ahoy! Cookie.
These Cookie Ice Cream Sandwiches are so simple and take minutes to make! Simply unwrap your Chips Ahoy! 18 Count. One package makes a filling frozen sandwich treat!
Add one tablespoon-sized scoop of ice cream on the bottom cookie. Top the ice cream with the additional cookie to form the sandwich. If you’re making these ahead of time, line them up on a baking sheet. I like to pre-make them for quick after-school snacks (my kids have returned to in-person learning).
Once they are all assembled, place them in the freezer for 5 minutes to firm up a bit. Then, roll them in your choice of sprinkles, or mini chocolate chips. If you are making them ahead of time, return them to the freezer for 10 minutes to firm them up before packaging them to store in the freezer.

Even though we are totally digging the NABISCO Chips Ahoy! Original Real Chocolate Chip Cookies, 0.77 oz, 18 count. Chips Ahoy! come in many varieties and they ALL would be wonderful for these mini-ice cream sandwiches!
If you find your ice cream is melting, you can freeze your cookies in between each step. My cookies were fine while working with them, but it was a chilly day (68 degrees). Thankfully, these refreeze rather quickly so freezing them before adding sprinkles for 10 minutes or so can quickly help them recover.
If you want to store your Cookie Ice Cream Sandwiches, just follow these easy steps.
Once your cookiewiches are fully assembled, place them on a baking sheet and freeze them for 10-15 minutes. Once they are firm and no longer melty, wrap them in double layers of plastic wrap to store them. You can also add them to snack-sized plastic baggies. These will last about a week or so for best taste wrapped in plastic wrap or in a small bag, but will last up to 3 months if stored via a vacuum sealer–but will they really last that long?

Mini Ice Cream Cookie Sandwiches
- Rimmed baking sheet
- Tablespoon cookie scooper
- 20 Chips Ahoy! Cookies
- ⅔ cup Ice cream You favorite choice
- ¼ cup sprinkles
- ¼ cup Semi Sweet Mini Chocolate Chips
- Unwrap your NABISCO Chips Ahoy! Original Real Chocolate Chip Cookies, 0.77 oz, 18 count. You will need ten packages or 20 total cookies.
- Using a tablespoon-sized cookie scooper, add one tablespoon of ice cream to the center of the bottom cookie. Add the top of half of the Chips Ahoy! Cookie to make a sandwich.
- Add sprinkles to the edges of the ice cream. You can easily do this by adding the sprinkles or mini chocolate chips to a shallow dish. Simply roll the ice cream edges around until they are coated.
