Better For You Zucchini Banana Muffins: The Perfect Picnic Addition

One of my favorite parts of summer is the bountiful harvests my garden produces. The moment when you can head outdoors and pick produce to incorporate into a baked sweet treat is so rewarding. With tender care and love a home garden can be such a blessing! Right now, all the zucchini we have growing prompted me to make a batch of Better For You Zucchini Banana Muffins which are the perfect picnic addition.
Paired with some delicious Starbucks Iced Coffee and Frappuccinos and we had the perfect excuse to head outdoors to relax and enjoy the cooler weather. Lately, we have been having such humid days that this reprieve felt Fall like and made me want to bake. I wanted to make something more nutritious and lighter so I decided on the Zucchini Banana Muffins which are moist, and fluffy. They are made with wholesome ingredients like organic wheat flour, Greek yogurt and raw honey.
These muffins may be lacking sugar, and white flour, but they certainly are not lacking flavor! I honestly wish the recipe made more than the 8-9 smaller sized muffins, but that’s ok because they were quick and no-fuss! I think they really are the perfect way to use up a medium sized zucchini!
Don’t these Starbucks at home beverages look awesome? I love being a Starbucks Ambassador because I get to enjoy some favorite beverages, and experience some new flavors. The Caramel Iced Coffee and S’Mores Frappuccino Starbucks beverages were amazing and perfect for my busy schedule. I don’t always have time to visit one of my local stores so having the Starbucks Via Iced Coffee, and bottled beverages is wonderful.

Each is really tasty and are ideal ice-cold and with a complementing sweet treat or alone. I personally enjoyed the S’Mores Frappuccino with a Zucchini Banana Muffin and a smear of butter. It was a great mid-day snack that satisfied my sweet tooth and gave me a boost of energy.
Here is the Zucchini Banana Muffin recipe:
- 1 & 1/4 cup of Organic whole wheat flour
- 2 tbp Baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- 1 large egg
- 1 tbsp of melted coconut oil
- 2 tsp of vanilla extract
- 1 mashed banana
- 2 tbsp of raw honey
- 1/4 cup of plain Greek Yogurt
- 3/4 cup grated zucchini
Preheat your oven to 325 degrees and grease a muffin tin.
In a large bowl mix your dry ingredients well
In another bowl add mashed banana, grated zucchini, egg, oil, vanilla, honey, and yogurt
Slowly add wet mixture into dry mixture. Your batter with be light and fluffy
Fill muffin tins 3/4 of the way (makes 8-9)
Bake for 20-22 minutes or until a toothpick comes out clean when placed into the center of the muffin.
Cool your Zucchini Banana Muffins for 15 minutes before removing from the pan
Enjoy your muffins with some Starbucks Iced Coffee while soaking up the sun. You can find these Starbucks bottled beverages at your local supermarket, most retailers, and gas stations.

Love the Starbucks drinks! I just bought some last week with a coupon I had and they’re already gone. I’ll be heading to the store for some more really soon. I haven’t seen the Mocha Coconut flavor, but will definitely search for it.

Those zucchini banana muffins sound delicious. I still have frozen zucchini from last year’s garden…I wonder if it would still be good. LOL Probably not but I can get some fresh from my neighbor. I didn’t grow any this year.
